Kesaria Paneer





Paneer is again one dish that can be made in so many different ways. As the name suggests today I am sharing recipe of Paneer with kesar, it is a very easy dish to make and is loved by kids because of its mild flavors. Try this new way of making paneer next time you are inviting someone for lunch or dinner.

Ingredients

150 gm paneer cube
vegetable oil for cooking
2 tablespoon butter
1/2 teaspoon kasuri meethi
2 bay leave
1 tablespoon ginger & garlic paste
2 tablespoon tomato puree
1 pinch hing
1 teaspoon garam masala
1 teaspoon red chili powder
1 teaspoon coriander powder
1 pinch red parika
1 teaspoon turmeric powder
1 teaspoon salt
4 saffron strands
1 cup water
4 tablespoon cream

For Garnish (optional you can add or subtract things according to your liking)

3-4 Shredded plain Paneer
3-4 Almond diced
3-4 pistachio
4-5 raisins
2 teaspoon sun dried tomatoes
1 tablespoon coriander leaves

Directions
1.       Put some oil in saucepan than put leaves of tezpatta for smell and add butter and pinch of heeng (optional) and chives

2.       Let them cook for 1 minute than add garlic & ginger paste and let it simmer than add fresh purée tomatoes to it and let it simmer on a low flame



3.       Keep stirring it from spatula in between

4.       Then add all the spices -- garam masala, coriander powder, red chilli powder, red paprika, salt, turmeric & saffron strands for colour

5.        After a while oil will start separating from the mixture than add one cup of water (200ml)

6.       Then add Paneer and now let it simmer on a medium flame till it starts condensing


7.       Now add whisked heavy cream and let it simmer for few more minutes till the gravy thickens.

8.       Now garnish it with almonds diced, pistachio, sun dried tomatoes or raisins and shredded plain paneer  mashed it from your hands ) or cilantro leaves if you may like

9.       Serve it with hot Rotis, puris or parathas or even kachoris
