Rice Veg Tehri


One of the most common doubts people have is - if there's any difference between Biryani, Pulao and Tehri and people tend to us these words interchangeably. 

The main ingredients (rice, meat/vegetables and even spices) are almost the same - it is the difference in the cooking method that gives different taste and three different dishes. Biryani is cooked in layers of meat/veg and rice, while in pulao both ingredients are cooked almost together and Tehri is somewhere in between. Pulao is made predominantly with dry fruits while in Tehri it is the dominance of vegetables. Pulao is rarely a whole meal implying you usually need a side dish, or gravy while Tehri is a wholesome meal comprising of vegetables and rice. Traditionally Tehri was coceptualised with just potatoes and rice but over time other vegetables made their way in leading to a more colorful, more delicious and more nutritious dish.



Ingredient

2 Cup Basmati Rice
1 Small bowl Ghee
1 Table spoon Salt
1 Tea spoon turmeric powder
1 Tea spoon garam masala powder
1 Tea spoon sahi jeera
1 Bowl chopped vegetable( Cauliflower, Been, Green Pees, Potato, chopped cabbage and carrot )
1 Small bowl chopped onion
1 Small bowl chopped tomato
1 small bowl curd
1/2 cup milk
1 Table spoon chopped ginger, garlic and green chili
1 Table spoon khara Masala ( 1 Black cardamon, 2 Green cardamon, 4 cloves and 1 Bay leave)
1 Tea Spoon Sugar
1 Small bowl chopped coriander and Mint leaves

Method

Soak rice in water for 1 hour
Remove rice from water and spreed on paper or plate
Heat 1 table spoon ghee in pan add sahi jeera and whole spices and roast it for few sec like 10 sec.
Add 1 tea spoon salt and 1 tea spoon sugar in heated ghee and add rice and roast for 5 min.
Remove rice from pan and mix rice in curd, milk and chopped coriander and mint leaves and keep aside for 30 min.
In the meanwhile again heat remaining ghee in a large cooking pan; add chopped ginger, garlic and green chili ,onion and chopped vegetables roast it till light golden color.
Now add add all dry masala powder like turmeric and garam masala powder and  chopped tomatoes and roast it for 2 to 3 min.
Add marinated rice in the roasted vegetables and mix well.
Add 4 cups of water, stir properly and cover with lid. Stir occasionally till the rice is properly cooked.
Garnish as you like and serve Hot.
You can serve with curd-raita
