Dum Aaloo Masala


Dum aaloo is a popular dish with spicy gravy. Typically it is made with whole potatoes, and pre-fried in oil. I made this recipe by replacing the frying portion of the cooking with marination. So instead of frying the potatoes to make it bit crispy, I instead marinated it in spices.


Ingredients:

6 to 7 Pealed small potatoes
1 small bowl chopped onion
1 small bowl tomato puree/ paste
1 tablespoon ginger & garlic paste
2 tablespoon curd
2 tablespoon cream
2 teaspoon salt
1 teaspoon turmeric powder
1 teaspoon garam masala
1 teaspoon cumin powder'
1 teaspoon coriander powder
1 teaspoon red chili powder
1 teaspoon dry pomegranate seeds powder
1 teaspoon dry mint powder
1/2 teaspoon cumin seeds
few whole garam masala- 1 bay leaf, 1 green & black cardamom  
2 tablespoon oil

Method:

Wash and peel potatoes, using a fork pierce each potato few times on different sides. This piercing helps the potatoes in absorbing the spices better.
Beat curd and cream together in a bowl and put potatoes, 1 teaspoon salt,1 pinch- turmeric powder, red chili powder, 1 teaspoon dry pomegranate seeds powder and dry mint leaves .keep aside for 20 min.


Heat oil in cooker and add cumin seeds, chopped onion and all whole garam masala, fry it for 2 min.

Add tomato paste/puree, ginger & garlic paste, salt, turmeric powder, cumin powder, garam masala powder, red chili powder and coriander powder, mix it well and roast it for 4 to 5 min.
 

Add marinated potatoes in the fried masala and cook for another 5 to 7 min on low flame.


Once masala has fried properly, add kasuri methi and 1 teaspoon ghee/butter, mix well and put on the lid of the cooker, and pressure cook on high flame for 5 minute, and then simmer and cook additional 2 minutes.

Let the pressure cooker cool on its own, - do not remove steam by lifting the vent weight.


Now Dum aaloo masala is ready to serve, You can serve with Roti or Rice.
