Parwal (Snake Gourd) & Alu Dum Fry



Its Parwal season so I thought why not share recipe of Parwal with you all! So today I am sharing recipe of Parwal & Alu Dum Fry, very easy recipe to make and at the same time tastes delicious. This is my Parwal recipe but with a twist so do try this recipe if you are making Parwal!!


Ingredients:

250 gm parwal
4 boiled and peel potato
1/2 cup vegetable oil
1 teaspoon salt
1 teaspoon turmeric powder
2 chopped onion
1 teaspoon red chili powder
1 teaspoon cumin powder
1 teaspoon garam masala powder
1 tablespoon ginger & garlic paste
2 chopped tomato
1 teaspoon cumin seeds
2 bay leaves
2 whole red chili
2 black and green cardamon
2 clove

Directions:
1.       Take Parwal and Potato and cut in small pieces


2    Heat refined oil in the open pan and deep fry Parwal ( light Brown) and remove it from pan

3    In the remaining oil, fry boiled Potato for 5 minutes and then take it out from pan

4      In the same pan, add whole cumin seed , bay leaves (Tej patta) , whole red Chili , green & black cardamom, cloves, cinnamon sticks and chopped onions and fry till they are light brown in colour.

5.       After it becomes light brown, add tomato pieces, ginger & garlic paste, salt, cumin powder, garam masala powder, onion & tomato paste.

6.       Mix everything well and fry it for another 10 minutes.
                         
7.       After it has been fried properly add fried potato and Parwal pieces (keep the pan on light flame) and cook for 10 minutes

8.       The cover it and cook for another 10 minutes

9.       Now your Parwal & Alu Dum Fry is ready

10.   Serve your Parwal & Alu Dum Fry with hot Butter Roti or Paratha
