Brinjals can be made in so many ways and they absorb other
flavours so well. Today I am sharing recipe of stuffed brinjal and have used different
spices to fill them along onion and tomato gravy to enhance the taste of
brinjals. Serve this simple dish with hot paranthas.
Ingredients:
For stuffing
6 brinjal
2 teaspoon coriander powder
1 teaspoon redchili powder
1 teaspoon turmeric powder
1 teaspoon dry mango powder
1 teaspoon salt
For stuffing
6 brinjal
2 teaspoon coriander powder

For gravy
2 chopped onion
2 chopped tomato
6 garlic clove
1 teaspoon cumin seeds
1 teaspoon turmeric power
1 teaspoon chili powder
1 teaspoon salt
4 tablespoon oil
Directions:

In a bowl mix coriander powder, chilli powder,
turmeric powder, dry mango powder and salt and mix it well 2 chopped onion
2 chopped tomato
6 garlic clove
1 teaspoon cumin seeds
1 teaspoon turmeric power
1 teaspoon chili powder
1 teaspoon salt
4 tablespoon oil
Directions:
2. Now slit the brinjals and fill this dry masala in it and keep it aside
3. Now cut onions and garlic and grind them together and make a paste.
4. Take a pan and heat oil in it and add cumin seeds and sauté it then add onion paste and sauté it well.
5. After that add finely chopped tomatoes and sauté.
6. After that mix turmeric powder, coriander powder, chili powder and mix them well.
7. Then put stuffed brinjal in sauté onion and tomato gravy.
8. Cook brinjals for 15-20 minutes
9. After take it out in a bowl and serve your stuffed brinjals with paranthas
