Chicken Lababdaar


Chicken Lababdaar is a popular delicacy in most of the Mughalai restaurants. It is said to have originated from the kitchen of Nizams during Mughal times. Below is a slight variant of the dish made from commonly available spices in any Indian kitchen. So next time if you have some special guests visiting you, try this chicken gravy item rather than the regular chicken curry.



Ingredients:

500 gms chicken ( cut in small pieces)
1 cup refined oil
1 bowl chopped onion
1 bowl chopped tomato
1 cup cream
2 tablespoon cashew paste
4 tablespoon butter
1 cup curd
1 tablespoon salt
1 teaspoon turmeric powder
1 teaspoon chili powder
1 teaspoon garam masala powder
1 teaspoon cumin powder
1 tablespoon ginger & garlic paste
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 tablespoon lemon juice
1 cup milk
1 teaspoon kasuri methi
Whole garam masala like( green & black cardamon, clove, cinnamon stick, bay leaves, red chili)

Method:

     1.    Clean chicken pieces with water and keep aside for 5 minutes to drain out excess water
     2.    In a  big bowl, make a thick paste by mixing Curd, cream, cashew paste, Milk, salt, 
         Turmeric Powder,  red chili powder,  ginger-garlic paste, kasturi methi, lemon juice.
     3.   Add this paste to Chicken pieces and leave for 2 hours to marinate

 

      4. Heat oil in an open pan -add cumins seeds, bay leaves,  2 whole red chili
      5. Add chopped onions and  marinated chicken and fry for 10 min
      6. Add tomato paste, salt, ginger & garlic paste, red chili powder, Jeera Powder,
         Coriander Powder, Garam Masala, mix properly and fry till turn light brown
          (Note: do not add any water during cooking as it will dilute the entire gravy)


    7.    Cook the above on low flame for another 10-15 minutes or till the chicken is fully cooked.
    8.     Make a tadka in a Kalchul (ladle) by heating butter or ghee and ½ table spoon sugar, 1 tbsp
    chicken masala.
    9.     Put the tadka in chicken
   10. Serve hot with Butter roti or butter naan.
