Chicken do Pyaaza



Last recipe in our Chicken special week is Chicken Do Pyaaza, it is one of the tastiest chicken recipe. Chicken Do Pyaaza has dominance of onions. It gives very specific sweet and spicy taste and is cooked in rich Indian spices. Little different compared to your regular onion based chicken in taste & flavor. This is a perfect dish for nice lunch/dinner party.


Ingredients:

500 gms chicken ( cut in small pieces)
1 bowl refine oil
2 green and black cardamom.
2 cloves
1 cinnamon stick
2 bay leaves
2 red chili whole
1 mid sized bowl chopped onion
1 small bowl chopped tomato
1 tablespoon salt
1 turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon garam masala powder
1 tablespoon chopped ginger & garlic paste
1 cup curd
1 tablespoon chopped ginger and garlic
1 teaspoon sugar

Directions:

1.       Spice to dry roast and grind
2.       In a pan dry roast cumin seeds, coriander seeds, garam masala whole and after that grind them to make fine powder
3.       Clean Chicken with water and keep it aside for 5 minutes to drain out excess water
4.       Take a big bowl and in that make thick paste by mixing curd, salt, turmeric powder,  red chili powder, ginger & garlic paste and roasted powder and small onion and mix it well then add chicken and again mix it well and leave it aside for 2 hours to marinate

Preparation for gravy

1.       Heat oil in an open pan -add green chili,  bay leaves and chopped ginger and garlic
2.       After that add chopped onion and roast for 8 to10 minutes. Once onion will become light golden  add chopped tomato and roast for 10 minutes till tomato will become very soft after that add marinate chicken in the pan
3.       Add little salt and turmeric powder and mix it well and keep it on light flame
4.       Once your chicken become soft take one big size serving spoon heat in the gas put butter or ghee and sugar and one green and black cardamom and keep it on flame for 1 or 2 minutes
5.       Once your chicken become light brown or soft add roasted ghee or in it
6.       Then keep it on flame for 2 minutes
7.       Serve your Chicken do Pyaaza with hot roti or rice
