Roasted Almonds


Third dish in our Navratre special is Roasted Almonds – quick and easy snack for tea time. They are very easy to prepare and are perfect side dish with hot cup of tea. So if you are feeling hungry and are out of options then do try this healthy snack.
Ingredients:

200gm Almonds
2 teaspoon sesame seeds
2 teaspoon sugar
1 tablespoon water

Directions:

1.       In  a pan dry roast the almonds.
2.       Now take out roasted almonds in a plate.

3.       Then in pan add sugar and water and stir till sugar dissolves.
4.       Once the sugar is dissolved add almonds and mix it well.
5.       Then sprinkle sesame seeds on them and mix it.
6.       Now your healthy Roasted Almonds are ready.


Kesar, Badam & Pista Shake



Our second dish in Navratre special is cool and refreshing Kesar, Badam & Pista Shake. It’s a very healthy milk shake with awesome flavour of kesar. A prefect cooling and filing drink to enjoy anytime of the day. Awesome drink to have while fasting J

Chicken in Coconut & Peanut Gravy




I am back with Chicken but today I tried chicken in coconut and peanut gravy and it turned out very delicious. The chicken is mildly spiced because coconut milk neutralizes the spices. It’s a perfect dish to cook for a small lunch or dinner.
Ingredients:

500 gm chicken cut in small pieces
1/2 cup roasted peanut powder
1/2 cup coconut powder
1/2 cup coconut powder
1 teaspoon black mustard seeds
10 curry leaves
2 bay leaves
2 green chili chopped
1 cup vegetable oil
1 tablespoon salt
1 teaspoon turmeric powder
1 mid sized bowl chopped onion
4 tablespoon onion paste
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon garam masala powder
1 tablespoon ginger & garlic paste
4 tablespoon butter
1 bowl chopped tomato
4 tablespoon tomato paste
1 cup curd
1 tablespoon mustard oil
1/2 teaspoon cumin seeds
1 teaspoon black pepper powder
2 whole red chili
1 tablespoon chicken masala

Method:
1.       Clean chicken with water and keep it aside for 5 minutes to drain out excess water
2.       Make a thick paste by mixing salt, turmeric powder, mustard oil, onion paste, tomato paste, roasted peanut powder, coconut powder, curd and 1 small spoon of ginger & garlic paste
3.       Add this paste to chicken pieces and leave it for 3 to 4 hours to marinate

Gravy preparation
1.       Heat oil in a pan and  put marinate chicken, onion pieces, tomato pieces , ½ spoon whole cumin seeds, black pepper powder, coriander powder, cumin powder, red chili powder, tej patta  and whole red chili
2.       Keep above thing for 45 minutes on slow flame till it becomes golden brown in color
3.       Once it becomes light brown in colour add chicken masala and garam masala and mix it well
4.       Once your chicken becomes soft then put off the flame

Tadka preparation
1.       Heat oil in pan then add curry patta , black mustard seeds and green chilies and small amount of onion and fry everything till it becomes golden brown in colour
2.       After that add chopped tomatoes and when the oil starts to leave the mixture it’s an indication that the onion & tomatoes base mixture is ready
3.       Then add coconut milk and boil it for 5 minutes
4.       Add Chicken to this mixture and keep it on light flame for 10 minutes and then add butter and mix it well
5.       Now your Chicken in Coconut & Peanut Gravy is ready to serve. You can have this chicken with plain dosa or chapatti

Egg Butter Masala



Egg is such a diverse food item we can make it in so many ways and the best part is that eggs are very easy to make. Today I am sharing recipe of Egg Butter Masala, extremely tasty and wholesome dish which makes anytime meal interesting. The specialty about this dish is in the way I have made the eggs. Instead of going the traditional way of making eggs in a pan I have made eggs in pressure cooker without using any oil so do try this new technique of making yummy omelets!!

Ingredients:

4 Eggs
1 teaspoon salt
1 teaspoon turmeric powder
5 tablespoon onion paste
5 tablespoon tomato paste
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon garam masala powder
1 tablespoon cream
4 tablespoon curd
1 tablespoon ginger & garlic paste
1 tablespoon egg masala powder
1 small bowl chopped tomatoes
1 small bowl chopped onions
1 chopped green chili 
2 tablespoon coriander leaves
1 small cup oil

Method:

1.       Break eggs in a bowl (2 full eggs and 2 eggs without the yellow part).
2.       Add ½ spoon salt, onion, green chili, coriander leaves and mix it properly.

 

3.       Pour the liquid in polythene bag and lock it tightly


4.     Now take some water in pressure cooker and keep this polythene in the pressure cooker and close the lid. After one whistle close the flame and take out the polythene from the cooker and keep it aside.


5.   Once it cools down remove eggs from the polythene and cut small it in small pieces.


6.    Now take a pan and heat the oil then put egg pieces in it and lightly fry them. Once they are little fried remove them from the pan.

7.       Now in the rest of the oil add onions and fry till they are light brown  in colour then add onion paste, tomato paste and ginger & garlic paste.

8.       Fry them a little and after few minutes add cumin powder, salt, turmeric powder, coriander powder, garam masala powder, curd and fresh cream and roast it till it is light brown in colour.

9.       When its become light brown add water ½ or 1 cup but don’t add more than that because then the gravy will not be thick.

10.   Add fired egg pieces in the grave and add egg masala and butter and cover the pan and keep in on light flame for few minutes.

11.   Serve your Egg Butter Masala with hot butter roti or butter nan.

Few days back we had a food carnival where we organized food competition and the winner of that food competition was Jasmeet Kaur and her winning dish was Jas Burrito. Today I am sharing the recipe of Jasmeet’s winning dish Jas Burrito’s! Burrito is type of Mexican Food but this dish is Indian version of Burritos and though it keeps the essence of original dish but still suits the palate of Indian people. Do try this dish though it looks like it has too many ingredients but once you actually start making you won’t have much difficulty in making it as it is fairly simple dish which just involves few steps!!
