During winter, we mostly prepare Gajar halwa and Gajar Kheer. Today I tried Gajar Kheer. This kheer is very easy to make and is extremely light dessert to have. This winter season enjoy Gajar Kheer instead of your normal rice kheer.
Ingredients
1 Cup grated carrot
2 tablespoon ghee
2 Cup Milk
1/2 cup condensed milk
2 table spoon sugar
1 tea spoon cardamom powder
2 tablespoon almond powder
1/2 cup few dry fruits- cashew. raisins and almond
Method
Heat 2 tablespoon ghee in a pan and add grated carrot and saute it over low flame for 5 minutes.
Add milk, mix well and bring it to boil over medium flame.
When it starts boiling, add condensed milk, dry fruits and almond powder and mix well.
Cook on low flame for 5 minutes while stirring continuously.
Cook until it starts thickening. Then remove from the flame
Add sugar and cardamom powder in it, mix well and cover it with lid for 2 to 3 minutes.
Garnish Gajar kheer with the dry fruits
You can serve this kheer hot or cold depending upon your preference.
