Baigan Bhaja

Baingan Bhanja or Begun Bhaja is a Bengali dish, where the big sized aubergines (small sized round eggplants) are sliced and marinated to give it exotic taste. There are a number of methods of making Baingan Bhaja. 

5 small brinjals or Eggplant
1 teaspoon panch phoran
1/2 small bowl onion paste
1/2 tablesppoon ginger and garlic paste
1/2 teaspoon cumin seeds
1/2 teaspoon blacl rai
10 leaves curry leaves
1/2 tablespoon lemon juice
2 tablespoon chopped coriander leaves
1/2 teaspoon coriander seeds
2 to 3 slice green chili
2 cup chopped tomato
2 tablespoon tomato puree
1 tablespoon cumin powder
1 tablespoon coriander powder
1 tablespoon garam masala powder
1 teaspoon red chili powder
1 teaspoon kasmiri mirch powder
2 tablespoon roasted peanut powder
1/2 cup oil


Wash the eggplants properly and make small cuts about half its size.
Marinate eggplant with 1 teaspoon salt, turmeric powder, cumin powder, garam masala powder, few ginger and garlic paste and red chili powder.

Fry eggplant in heated oil .

In the left heated oil, add black rai, curry leaves, panch phoran, coriander seeds and green chili, onion paste and ginger & garlic paste and mix well.

Roast it for 3 to 4 min.

Add chopped tomato paste in it and mix well.

Add  salt, turmeric powder, cumin powder, coriander powder, garam masala powder, red chili powder , tomato puree and  kasmiri mirch powder and mix well. 

Roast it for 5 to 6 min and add the fried eggplants in it.

Roast it for 3 to 4 min and add 1/2 cup water in it

Keep on low flame for another 5 to 7 min and cover with lid till it become soft and cooked properly.

Add roasted peanut powder in it mix well, garnish with coriander and serve hot.
