You may have tried or tasted the brinjal pakodra or brinjal tawa fry. I tried the same with some variants by adding different spices which will give it a very different taste. The following recipe will give a tangy taste of mint, chilli, ajwain, and a mild flavor of lemon. Try it to believe its unique taste.
Ingredients:
8 to 10 thin slices of brinjal (round shaped)2 tbs gram floor
1 tbs suji/rawa
1tbs rice powder
1 tbs bread crumbs
2 tbs tomato puree
2 tbs onion paste
1 tbs garlic paste
1 tbs chopped ginger
1 tbs red chilli powder
1 tbs salt
1 tbs turmeric powder
1 tbs garam masala
1 tbs lemon juice
1 tbs ajwain
1 tbs dry mint powder
1/2 cup water for preparing thick paste
Put brinjal slices in the paste one by one
Heat oil in a pan or a tawa with thick base
Deep fry the brinjal slices laced with the paste
Fry till they are golden-brown in color.
Serve with coriander or any other chutni

Make a thick paste of all the above ingredients .Put brinjal slices in the paste one by one
Heat oil in a pan or a tawa with thick base
Deep fry the brinjal slices laced with the paste
Fry till they are golden-brown in color.
