Veg cheese Quesadillas


Quesadilla is a quick snack or a light meal. It is an original Mexican dish, where they put lots of cheese and beans, but to give it a desi twist, I have made some variants and given it an Indian Kitchen flavor.



There are 3 main components of Quesadilla -

1. Quesadilla base (you can prepare like roti or get it from any super market).
2. Fillings (can be vegetarian or chicken or mix of both).
3. Some tangy dips (Tomato salsa, or even green coriander chutney/dip)

Here I am going to suggest steps to prepare everything at home on your own. Alternatively you can get the Quesadilla base and dips from market and make fillings of your own.

Ingredients for Quesadilla base:

1/2 cup wheat flour
1/2 cup maida or all purpose flour
1 pinch baking powder
1 egg white
1 teaspoon salt
hot water

Ingredients for Fillings (vegetarian option):-

1 bowl of finely chopped onion, carrot, capsicum, green peas and corn
1 teaspoon chopped green chili and ginger
2 boiled and mashed potatoes
1/2 cup paneer crushed
1/2 teaspoon salt
1/2 teaspoon lemon pepper
1/2 teaspoon red chili flakes
1/4 cup finely grated cheese
1 Egg for each Quesadilla
1 table spoon butter

Method for preparation of Quesadilla base:-

Mix all the ingredients listed above, together and make a soft dough with hot water.
Make a thin base using rolling-pin like roti/chapati.
Roast on tawa gently, till its almost half cooked.


Method for preparation of stuffing:-

On a tawa/frying pan, add one tablespoon butter, add all the vegetables and fry for 2-3 minutes.


Add salt, lemon pepper, chili flakes and mix properly.
Mix mashed potatoes and paneer and fry for another 2-3 minutes.


Once its cooked, remove it from flame and keep aside.

Preparation of Quesadilla:-

Heat little butter and put the Quesadilla base on a tawa.


Heat on both sides.
On one side of Quesadilla, put egg.


Flip on the other side.
Once the egg-side is also cooked, put the fillings on half side of Quesadilla and adding grated cheese.


Cover it with other half.


Gently cook on both sides, till it becomes crispy.
Remove from flame and once its slightly cool, cut in pieces.
Serve it with tomato salsa dip.


Note: If you want to try a non-vegetarian option for the fillings, you can add small pieces of roasted chicken (like small pieces of chicken tikka), or even minced and fried chicken instead of paneer.
