Kadai Paneer

I love making paneer because it is so easy to cook & can be mixed with various other vegetables. Kadai paneer is the easiest paneer recipe I make. Kadai Paneer is nothing but a simple dish prepared with minimum effort using paneer & green capsicum. This dish goes very well with simple soft rotis so next time you are in a fix as to what to cook and want a quick & easy recipe then do try this yummy Kadai Paneer.

250 gms Paneer Cubes
1 small Capsicum
1 chopped Onion
1 chopped Tomato
1-2 Green & Black Cardamom, few pepper seeds, 1 cinnamon stick, 1-2 bay leaves
½ teaspoon Coriander Seeds, Cumin Seeds
2 Whole Red or Kashmiri Chili
1 tbs Salt
1 teaspoon Turmeric Powder
2 tbs Onion Paste
2 tbs Tomato Puree
2 tbs Curd
2 tbs Fresh Cream
1 teaspoon Red Chili Powder
1 teaspoon Coriander Powder
1 teaspoon Cumin Powder
1 teaspoon Garam Masala
1 tbs Ginger & Garlic Paste
1 teaspoon Kasturi Meethi
2-3 tbs Oil / Ghee

1.       First roast green & black cardamom, black pepper seeds, cinnamon stick, bay leaves, coriander seeds, cumin seeds and whole chili in a pan on a low flame
2.       When the spices cool down, grind them in a grinder to a semi fine or fine powder
3.       In a pan heat 2-3 tbsp oil or ghee. Then add ginger garlic paste and roast it for 1 to 2 minutes add- chopped onion and again roast onion till semi golden color
4.       Add the freshly ground masala powder and chopped tomato and roast for 2 to 3 minutes
5.       Then add tomato puree, cream and curd, mix it properly and roast for 2 to 3 minutes
6.       Stir well and add salt, turmeric powder, coriander powder, cumin powder, red chili powder and continue to roast till you see oil leaving the sides (it will take about 9 to 10 minutes on low flame)
7.       Then add capsicum and let it simmer for 2 to 3 minutes on a low to medium flame
8.       Then add kasturi meethi and garam masala and mix it well
9.       After that add paneer cubes and stir gently
10.   Let it simmer for 2 to 3 minutes so that paneer is cooked properly
11.   Now your Kadai Paneer is ready to serve
