Mutton Rogan Josh



Mutton rogan josh is a spicy curry and it is very popular through out India. This mutton curry is little spicy and gives right punch to your taste buds. This dish can be perfect for lunch or dinner. The uniqueness of Mutton Rogan Josh is that never cook in pressure cooker.



Ingredients:

1 kg lamb/ Goat  mutton cut in curry pieces
1 cup curd
5 mid sized onions chopped
1 tablespoon ginger & garlc paste
1 tablespoon garlic & garlic chopped
1/2 tablespoon garam masala powder
1/2 tablespoon cumin powder
1 tablespoon salt
1/2 tablespoon coriander powder
1 teaspoon red chili powder
1 teaspoon kashmiri red chili
1 tablespoon mutton curry masala
1 cup mustard oil
2 tablespoon ghee
1/2 teaspoon black pepper seeds
3-4 red chili whole
2 bay leaves
2 black & green cardamon
4 clove
1 teaspoon cumin seeds
2 green chili

Method:

Clean mutton pieces in water, keep it aside for 5 to 7 min to drain out excess water

In a cooking pan add mutton, chopped ginger, garlic, green chili, 1 teaspoon salt, 1 teaspoon turmeric powder, 1 tablespoon mustard oil and 1 cup water and cover with lid and cook on low flame for 45 min. keep stirring intermittently to prevent it from sticking to the base.


Once the mutton pieces have become tender, keep on low flame and cook till all water has evaporated.


Now heat all remaining oil in other cooking pan and add cumin seeds, red chili whole, black pepper whole, clove, bay leaves, green and black cardamon and slice chopped onion and fry it till onion become light brown in color.

Add ginger & garlic paste, turmeric powder, salt, cumin powder, coriander powder, garam masala powder and red chili powder and fry for another 7 to 8 min.


Switch off the flame and keep this fried masala to let it cool

Prepare paste of fried masala in a grinder .


 Now add the fried masala paste into the fried mutton and add curd, mix well.

keep it on low flame for 30 to 35 minutes and keep stirring .

Heat 2 table spoon ghee in other small pan add mutton masala and red kashmiri mirch stir for 1 min and put it on the mutton

Keep it on the low flame for another 5 min .

Server with hot Chapati and Rice.
