Makki di roti and Sarson da saag
Makki Di Roti and Sarson Da Saag is very popular dish of Punjab. The combination of Makki Di Roti and Sarson Da Saag is very famous in fact we can say both are made for each other. It is one of those traditional dishes which Indian aspire to eat, but usually try it in restaurants. So here I am presenting the recipe which you can conveniently prepare at home.
Makki Di Roti in its very traditional form with only maize flour is difficult to bind and roll into rotis. So I suggest adding a little amount of gram flour to make a nice dough and it eases the roti making process.
We generally prepare Sarson Da Saag during winter time as during this season fresh mustard leaves are available very easily. Usually people prepare it with bhathua leaves but I prepared it with spinach leaves also because spinach is very easily available.

Chicken Mastani
There are many dishes prepared with chicken as the main ingredient, and you must have came across many varieties of chicken curries such as butter chicken, chicken tikka masala etc. but this time I prepared chicken curry as a combination of two gravy and named it chicken mastani.

All I can say is that family members were blown away with the two contrasting gravies and the flavors were just out of this world. This recipe is little time consuming and indulgent but it never hurts to spend that little extra time in kitchen once in a while. Stuffed Capsicum Masala
Capsicum is usually prepared as an accompaniment to the main vegetable curry or recipe in which it is added, but rarely as the main ingredient of a recipe itself. You would have come across capsicum as a pizza topping, as part of fried vegetables in fried rice or noodles, or even as one of the ingredients in some Indian curries - such as Kadai paneer, or kadai chicken, mixed vegetable etc. The interesting part about capsicum are its shape and distinctive flavor. Cutting it slightly on the top makes it look like a bowl - and hence can be used for filling. This is the main essence of the recipe, I am presenting today - Stuffed Capsicum Masala ! Also as it comes in three different vibrant colors - red, yellow and green capsicum - it makes a nice dish from presentation perspective.

Paneer is one
dish which we surely make if we are inviting someone for lunch or dinner. This weekend
I was in a mood to have paneer but not in the usual way so did a little
experiment and made paneer using two types of gravy – first gravy I made using
tomatoes to give that punch and tanginess to paneer and other one I made using
almonds and cashews so that it has that richness and creaminess. All I can say
is that family members were blown away with the two contrasting gravies and the
flavours were just out of this world. This recipe is little time consuming and
indulgent but it never hurts to spend that little extra time in kitchen once in
a while. If you are looking for something different to make next time you have
guests coming over, then definitely try this recipe it will surely be a hit
with all the age groups.
Note: Prepare the paneer in the last after making the two gravies as paneer tends to get hard. If you want soft paneer then roasting the paneer should be the last step.
