Kesar Khoya Paneer Khofta




 Today I am sharing recipe of very interesting dish – Khofta. We all make different kind of khofta but today I tried making khofta using paneer, kesar, khoya and potatoes and result was totally awesome. This is the perfect dish for any dinner or lunch party. Not exactly for people counting calories but surely a dish you won’t mind indulging once in a while. I have used cream, milk and fresh cream in it so the flavors are very balanced and dish is very mildly spiced. My daughter just loved it…I am sure so will your kids J So do try this new type of Khofta!!


Ingredients:

1 small bowl paneer (crushed)
1/2 small bowl khoya ( crushed)
1/2 boiled potato ( mashed)
6 strands kesar
4 tablespoon fresh cream
3 table spoon curd
1 cup milk
1 tablespoon poppy seeds
1 small bowl chopped onion
1 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon garam masala powder
2 tablespoon tomato puree
1 teaspoon salt
1 teaspoon red chili powder
1/2 small bowl chopped coriander powder
1 teaspoon lemon juice
1 tablespoon ginger & garlic paste
2 tablespoon cornflour powder
1 teaspoon coconut powder
1 cup oil
1 teaspoon cumin seeds
2 green cardamom
Directions:
1.       In a bowl take khoya, paneer, potatoes, poppy seeds, kesar, salt, coconut powder and corn flour powder and mix properly

2.       Mix it well so that paneer, khoya and potatoes get together mashed up in the process. Shape them into medium sized balls
3.       Take a pan and heat oil for shallow or deep frying and fry these balls till they are golden brown on both sides


4.       Fry all the koftas like this


5.       In another pan heat oil  and add whole cumin and green cardamom after that add chopped onion and fry till they are light brown in colour then add tomato puree and ginger garlic paste and fry for 5 minutes
6.       After that add turmeric powder, salt, cumin powder, garam masala and mix it properly
7.       After that add cream and curd and keep in to the light flame till the oil starts to leave the side of masala paste. This will take approx 9-10 minutes on a low flame.


8.       Then add milk and let till simmer till the gravy becomes thick and creamy
9.       Lastly add the fried koftas. If serving kofta later, you can just prepare the gravy and add koftas while serving. These koftas are really soft so if you add them before and serve them later, they will break. Since I was serving immediately, I added them to the gravy
10.   Now your Kesar Khoya Paneer Kofta is ready to serve. Garnish with coriander leaves or any dry fruit of your choice and serve it with paratha / butter roti.
