Saanjh Savere is a signature recipe from the famous chef Mr. Sanjeev Kapoor. I was greatly inspired by this and tried to make the same with slight variations for ease of cooking. So let's try it -<br />
<br />
<b>Ingredients</b><br />
<br />

<li>Spinach Leaves – ½ kg (cleaned and stems removed)</li>
<li>Paneer (Cottage Cheese) – 200 gm (finely grated)</li>
<li>Tomatoes - chopped 1 bowl</li>
<li>Onion – chopped 1 bowl</li>
<li>Gram flour (Besan) – 2 tablespoons</li>
<li>Maize flour (makke ka aata) – 2 tablespoons</li>
<li>Corn flour – 1 tablespoon</li>
<li>Green chili – finely chopped – 1 teaspoon</li>
<li>Ginger – finely grated – 1 tea spoon</li>
<li>Garlic – finely chopped – 1 tea spoon</li>
<li>Whole Garam Masala (2 Green Cardamom, 1 black cardamom, cinnamon sticks, bay leaves, 2 cloves)</li>
<li>Cumin seeds (Jeera Whole) – 1 tea spoon</li>
<li>Cream – ½ cup</li>
<li>Dry fruits powder (Cashew powder, Almond powder, 1 tablespoon each)</li>
<li>Turmeric powder – 1 teaspoon</li>
<li>Red Chili powder – 1 teaspoon</li>
<li>Garam masala powder – 1 teaspoon</li>
<li>Cumin powder – 1 teaspoon</li>
<li>Salt – 1 teaspoon </li>
<li>Butter – 2 tablespoons</li>
<li>Oil – for deep frying - ½ cup</li>
<li>Milk – ½ cup</li>
<li>Kasoori methi – 1 teaspoon</li>
</ul>

<b><u>Method:</u></b><br />

<li>Boil and strain spinach and keep aside to cool and drain away all water</li>
<li>Make paste once it has cooled down. (Don’t add any water while making paste). It should be thick paste</li>

<li>Add ½ cup milk and cover with lid for 5 minutes</li>
<li>Remove from flame and keep aside to cool down. </li>
<li>Once it’s cooled down, make a paste in mixer-grinder</li>
<li>In a shallow pan, add 2 tablespoon butter, a pinch of whole jeera and add the paste we just prepared.</li>
<li>Add turmeric, garam masala powder, red chilli powder, salt and mix the dry fruits powder and ½ cup water - cook for 5 minutes on low flame</li>
<li>Add kasoori methi and mix properly and leave on low flame for 10 minutes. Once the gravy is cooked properly, add cream to it.</li>

Momo is one of the famous recipe from Nepal. This is also known as dumplings. It can be eaten as side and main dish. It can be a vegetarian and Non-Vegetarian as you choose. Momo / Dumplings is very famous dish in all over world and especially in Asian countries. Most of the restaurant are adding this menu to their menu card.<br />

<b>Ingredients</b><br />

<li>1/2 small bowl chopped onions</li>
<li>1/2 small bowl chopped capsicums'</li>
<li>1/2 small bowl cauliflowers</li>
<li>1/2 small bowl chopped cabbage </li>
<li>1/2 small bowl chopped carrot</li>
<li>1 tablespoon chopped ginger and garlic</li>
<li>1 teaspoon chopped green chili'</li>
<li>1 tablespoon salt</li>
<li>1/2 tablespoon pepper</li>
<li>2 tablespoon oil</li>
<li>2 cups flour (maida or all purpose flour)</li>
<li>1 teaspoon noodle masala or sauce (Optional, if you want it tangy or spicy)</li>
</ul>

<b>Method:</b></div>

<b><i>Preparation of Fillings:</i></b><br />
<br />
Take all the vegetables, which are finely chopped and mix them in a bowl.<br />
Saute these chopped vegetables in oil on a heated pan<br />
Mix all the spices, salt and optional sauce/noodle masala<br />
Once it is fried a little, take it off the flame and keep aside to let it cool<br />
Your filling/stuffing is ready<br />
<br />
<b><i>Preparation of Dough and filling with vegetables:</i></b><br />
<br />
Make the dough with Maida/all purpose flour, oil and water.<br />
Keep the dough aside for 15 minutes<br />
After that make small balls of dough and flatten it (like small chapati/poori) - 3-4 inches in diameter.<br />
Stuff the fillings in these and press the edges while folding from one end to the other in shape of dumplings<br />
<br />
<b><i>Steam the dumplings:</i></b><br />
<br />
Heat up water in steamers (or you can also use idli stand in a cooker, if you dont' have steamers)<br />
Grease the surface with light oil to prevent dumplings from sticking to the stand<br />
Put the dumplings on the stand<br />
When the water boiled, cover the lid of the steamer<br />
Keep steaming it on low/medium flame for 15 minutes<br />
<br />
Your dumplings are ready. You can serve them steamed or gently fried with some sweet and chili sauce as well.<br />

Take 1 tomato, 3-4 red chilies, 1/2 capsicum 1/2 onion, 3-4 garlic cloves<br />
Boil them in a pan for 10 minutes.<br />
Let it cool<br />
In a mixer-blender make a paste of this<br />
Heat 1 teaspoon olive oil/ Vegetable oil in a small pan and add this paste and salt as per your taste.<br />

Daal Makhani is an all-time favorite dish of Punjab. It is made with onion & tomato based gravy and is mildly spiced. Below is my way of cooking simple Daal Makhani, very easy & tasty recipe. Daal Makhani taste best with Jeera rice or plain steamed basamati rice.<br />

2 tablespoon chopped ginger, garlic and green chili<br />
1 teaspoon salt<br />
1 teaspoon turmeric powder<br />
1 teaspoon cumin powder<br />
1 teaspoon coriander powder<br />
1 teaspoon red chili powder<br />
1 teaspoon garam masala power<br />
few whole garam masala - 2 green and black cardamom, 4 clove, 4 bay leaves, 2 cinnamon stick.<br />
4 tablespoon ghee<br />
2 tablespoon daal makhani powder<br />
2 chopped tomatoes<br />
4 tablespoon cream<br />
1/2 cup milk<br />
1 cup water<br />

Take overnight soaked black daal and rajma in a cooker and add salt, turmeric powder, cumin powder, red chili powder, garam masala powder and 2 cup water. Pressure cook it on high heat for 10-15 minutes 5 to 6 whistles)<br />

No festival is complete without dessert and our Holi special dessert is Chandrakala. This is a famous dish of North India. This dish is very similar to gujiya. This dessert is dipped in sugar syrup and has khoya / mawa filling in it which makes it a very filling dish & on this sweet note wishing all the members of Desitadka a very Happy Holi!<br />

2 small bowl all purpose flour<br />
1 cup refined oil<br />
1 cup sugar<br />
1 cup khoya<br />
1 tablespoon green cardamom powder<br />
1/2 bowl chopped dry fruits ( as you like)<br />
1 tablespoon coconut powder<br />
1 tablespoon ghee<br />

Method<br />
<br />
In a bowl take all purpose flour and add 4 to 5 tablespoons refined oil and mix properly, then add little water and knead firm dough. Then cover it with wet cloth.<br />

In a pan heat ½ tablespoon ghee on a low flame and add grated khoya to it, keep stirring it on low flame.<br />

Cook the khoya till it begins to gather around itself. Then take it out in a bowl and keep it aside to cool down.<br />

Once the khoya has cooled down, add ⅓ cup sugar, dry fruits and ½ tsp cardamom powder and mix properly to make sure there are no lumps. Now your stuffing is ready.<br />

Batata Vada is a popular Maharashtrian food, which goes very well as snack or light breakfast. One interesting fact is "Batata" is actually a Portuguese word meaning potato. 2 tablespoon ghee<br />
2 Cup Milk<br />
1/2 cup condensed milk<br />
2 table spoon sugar<br />
1 tea spoon cardamom powder<br />
2 tablespoon almond powder<br />
1/2 cup few dry fruits- cashew. raisins and almond<br />
<br />
<b>Method</b><br />
<br />
Heat 2 tablespoon ghee in a pan and add grated carrot and saute it over low flame for 5 minutes.<br />
<br />
Add milk, mix well and bring it to boil over medium flame.<br />
<br />
When it starts boiling, add condensed milk, dry fruits and almond powder and mix well.<br />
<br />
Cook on low flame for 5 minutes while stirring continuously.<br />
<br />
Cook until it starts thickening. Then remove from the flame<br />
<br />
Add sugar and cardamom powder in it, mix well and cover it with lid for 2 to 3 minutes. <br />
<br />
Garnish Gajar kheer with the dry fruits<br />
<br />
You can serve this kheer hot or cold depending upon your preference.<br />

Line a baking tray with baking paper and take small scoops of the above mixture and keep them on the tray around 3cm apart. Don't worry about the shape, it will slowly take the shape of rounded cookies on its own because of butter. Just remember to keep them sufficient apart, else they will get stick to each other during baking.<br />

<b>Ingredients</b><br />
<br />
2 2/4 cup all purpose flour<br />
1/2 teaspoon baking powder<br />
1 pinch salt<br />
2/3 cup Powder sugar<br />
1/4 cup granulated sugar<br />
250 Gm unsalted butter at room temperature<br />
1 teaspoon vanilla extract<br />
1/2 tea spoon each color - Pink, green and cream food color<br />

<b>Method</b><br />
<br />
Mix all dry ingredients in a bowl- 2 cup flour, baking powder, salt, sugars and mix well.<br />
<br />
Add butter and vanilla extract in the mixed dry ingredients; mix well by hand mixer or food processor.<br />
<br />
Prepare a dough ball from it.<br />
<br />
After preparing the dough ball, divide into 3 equal portions.<br />
<br />
Keep it in three separate bowls and add color in them and mix well. If you need you can add few dry flour.<br />
<br />
Keep each of colored dough balls between two sheets of butter-paper/zip-locks and roll each of these three separately in rectangular shape around 1/8 inch of thickness. <br />

Wrap it in the shape of a log in a plastic wrap and refrigerate until firm. It would be about 3 hours.<br />

Make slices of it and bake them in a preheated oven on 325 F (160C) for 10 to 12 minutes,<br />

<b>Ingredients </b><br />
<br />
1 cup self raising flour<br />
2/3 cup caster sugar<br />
1 teaspoon vanilla essence<br />
2 whole egg lightly beaten<br />
1/3 cup cocoa powder<br />
1/2 teaspoon soda powder<br />
1/2 cup milk<br />
whisk cream for decoration<br />
10 cup cake liner<br />

<b>Method</b><br />
<br />
Mix cream butter, sugar and vanilla until creamy and fluffy the help of hand mixer.<br />
<br />
Gradually add egg and mix until just combined.<br />
<br />
Combine flour cocoa and soda and add to the creamed mixture with milk, beat until just combined.<br />
<br />
Pour it in to cup cake liner and keep it in cup cake equipment.<br />
<br />
Bake it 15 to 20 min in preheated 160C oven .<br />
<br />
Remove from oven keep aside for cold and decorate with whisk cream.<br />
