Green Peas Daal



For me daal is comfort food and whenever I come back from vacation or not feeling well than daal chawal is the food I want. Few days back I wanted to have daal and chawal but somehow was not in a mood for regular daals that we make so I made Green peas daal. It turned out truly delicious and something different to have when you are bored with regular yellow or black daal. Quick & easy recipe if you are craving for simple home food.
Ingredients:
1.       Green Peas                                : ½ small bowl       
2.       Green Peas Paste                     : 5-6 tablespoons
3.       Onion                                          : 2 (Chopped)
4.       Tomato                                       : 2 1(Chopped)
5.       Green Chili                                 : 1-2 (Chopped)
6.       Ginger & Garlic                         : 1 tablespoon (Chopped)
7.       Butter/Ghee                              : 2 tablespoon
8.       Salt                                            : 1 tablespoon (According to taste)
9.       Sugar                                          : ½ teaspoon     
10.   Turmeric Powder                     : 1 teaspoon      
11.   Cumin Powder                          : 1 teaspoon
12.   Garam Masala                           : 1 teaspoon
13.   Red Chili Powder                      : 1 teaspoon
14.   Whole Garam Masala             : 1-2 pieces of bay leaves, green & black cardamom, cloves
15.   Cumin Seeds                              : 1 teaspoon
16.   Tomato Puree                           : 3-4 tablespoon

Directions:
1.       Heat oil in presser cooker and roast 1 chopped onion, once they become light brown in color add 1 tomato and roast for some time then add green peas paste and ginger & garlic and roast it for 1-2 minutes
2.       After that add salt, turmeric powder, cumin powder, garam masala powder and roast till it becomes dark brown in color (It will around 15 minutes for it to roast properly)
3.       After that add green peas in the paste and roast properly, then add 2 cups water and give 4-5 visil
4.       Tadka preparation:
a.       In another pan heat oil or ghee or unsalted butter, then add cumin seed, bay leaves, green & black cardamom and fry them. Then add the other chopped onion and fry till it becomes light brown, then add other chopped tomato, green chili, tomato puree and fry the mixture till it becomes light brown in color
b.      Then add garam masala powder and sugar and mix it properly
c.       When the oil starts to leave the mixture, its an indication that tadka is ready
5.       Add this fried mixture to the green peas daal and mix it properly and keep the daal on light flame for 10 to 15 minutes
6.       Now your Green Peas Daal is ready to serve

Raw Mango & Coriander Seeds Chutney



Chutney is a perfect condiment with any Indian food or snacks. The chutney recipe that I am sharing today is of raw mangoes and coriander seeds, this chutney goes well with chaat and snacks items. This chutney taste little different because no lemon juice is added in this and the tangy and citrus flavor comes from raw mangoes. Try this Chutney if you are in a mood for something different.

Tawa Chicken Biryani



Valentines Day is such a beautiful day and day to express your love & care for loved ones and what gives me immense happiness is to cook something special for my loved ones. That’s why tonight’s dinner is Tawa Chicken Biryani. I have made it in slightly different way than usual biryani and it gives amazing flavor to the whole dish. Make this Valentine special by surprising your special one with their favorite dish!

Ingredients:

250 Gm boneless chicken ( cut is small pieces)
1 small cup basmati long rice
1/2 cup vegetable oil
1 tablespoon salt
1 teaspoon turmeric powder
1 teaspoon cumin seeds
1/2 black pepper seeds
2 red whole chili
1 bowl chopped onion
1 small bowl fried onion
1 tablespoon ginger & garlic paste
1 small bowl chopped tomato
2  bay leaves
2 black & green cardamom
2 tablespoon ghee
1/2 small bowl chopped mint leaves
1/2 small coriander leaves
2 tablespoon curd

Directions:
1.       Clean rice with water  and keep it aside for 30 minutes to dry.


2.       Now take microwave safe big size bowl and add 2 cup water put rice along with  1 green cardamom, 1 black cardamom, bay leaves, fried onions, salt and whole chili and
 microwave it for 25 minutes (It should be semi cooked)


3.       On other side clean the chicken and keep aside to remove excess water
4.       Then in a bowl take chicken and add salt, turmeric powder, red chili powder, garam masala, ½ spoon chopped ginger & garlic, chopped onion, chopped tomatoes, mint leaves and 2 tablespoon curd and keep it for 30 minutes to marinate


5.       Cook the above marinated chicken and its ingredients in a presser cooker and give 1 visil


6.       Remove the lid of the cooker and keep it on flame till all the water has dried-up or alternatively you can take out and dry it in a separate frying pan


7.       Spread ghee or butter in a big-sized tawa,  and add cumin seeds & black pepper seeds, fry it then put rice on it, followed by chicken and rice again in layers  and cover it with a lid
8.       After 3-4 minutes, remove lid and fry the above on tawa and mix properly. Keep frying it on tawa for another 2-3 minutes


9.       Once it is ready garnish with coriander leaves
10.   Serve with curd and salads

Gobhi Musallam


Gobhi Musallam is a typical North Indian dish and is usually made during parties. In this dish you marinate the cauliflower and then make it in spicy gravy. It tastes wonderful and is quite a change from your regular aloo gobhi sabzi. I am sure you will enjoy this different way of cooking cauliflower.

Ingredients:
1.       Cauliflower (Gobhi)                : 7-8 pieces ( Cut in big sizes)
2.       Desi Ghee                                : 3-4 tablespoon
3.       Tomato                                     : 1 (Chopped)
4.       Onion                                         : 1 (Chopped)   
5.       Salt                                             : 2 teaspoon (According to taste)
6.       Turmeric Powder                     : 1 teaspoon
7.       Roasted Onion Paste              : 5-6 tablespoon
8.       Roasted Tomato Paste            : 5-6 tablespoon
9.       Red Chili Powder                      : 1 teaspoon
10.   Coriander Powder                    : ½ teaspoon
11.   Cumin Powder                          : 1 teaspoon
12.   Garam Masala                          : teaspoon      
13.   Ginger & Garlic Paste              : 1 teaspoon
14.   Coriander Leaves                     : ½ Small Bowl (Chopped)
15.   Curd                                           : 1 Small Bowl
16.   Cream/Malai                            : 1 Small Bowl
17.   Whole Garam Masala             : 2-3 pieces ( Cumin seeds, Green & Black Cardamom, Bay Leaves, Cinnamon) 
18.   Kitchen King                              : 1 tablespoon
19.   Oil                                               : 3-4 tablespoon

Directions:
1.       Clean cauliflower with hot water and keep it aside for 5 minutes to drain out excess water
2.       Boil gobhi in microwave or boil in on gas with 1 cup water, salt, turmeric powder, red chili powder, garam masala

                                                               
3.       Then take an open pan and heat oil after that put boiled gobhi in it and roast till gobhi becomes golden brown in color. Cover the pan to roast gobhi
4.       Now remove gobhi from the pan and keep it aside
5.       Now put oil in open pan and add whole garam masala and fry it then add onion and fry them till they are golden brown in color after that add tomatoes and again roast for few minutes
6.       Now add roasted onion and tomato paste, ginger and garlic, salt, turmeric powder, red chili powder, cumin powder, coriander powder and mix properly and roast for 10 to 15 minutes
7.       Once your masala will roast properly and add curd & cream and mix it properly
8.       Now put your gobhi in remaining masala and mix it properly and keep it on low flame & cover with lid. It will take around 15 minutes for it to cook properly

9.       After that add put coriander leaves in it and ghee, cover it with lid and keep it on low flame for 5 minutes
10.   Now your Gobhi Musallam is ready to serve

Egg Bhuna Masala




Egg is such a versatile food item and can be made in so many ways. I made Egg Bhuna Masala few days back and it was so quick & easy to make. If you have to cater to some surprise lunch or dinner or don’t feel like doing elaborate cooking then this is the perfect dish to make. You can also have Egg Bhuna Masala as snacks or part of main course meal.

 Ingredients:

6 Boiled Egg cut in half
1 egg yolk
1 cup vegetable oil
1 tablespoon salt
1 teaspoon turmeric powder
1 teaspoon cumin seeds
1 teaspoon black pepper seeds
2 red chili dry
2 chopped onion
1 tablespoon ginger & garlic paste
2 chopped tomato
1 bay leaves
2 green & black cardamom
1 tablespoon cornflour powder
1 tablespoon chopped coriander leaves


Method:
1.       In a bowl take egg yolk, corn flour powder, salt and mix it properly to make thick paste.

2.       In a plate take all the boiled eggs and cut them from the middle and put one spoon of this paste on top on each one.



3.       In a kadai, heat oil and carefully fry these eggs in it till they become light brown in color.

4.       Now remove eggs from the oil and in a plate and keep it aside.


5.    In a pan, heat oil and add cumin seeds, black pepper seeds, red chili, ginger & garlic and bay leaves and sauté them then add onions and fry it for some time then add tomatoes and make paste, roast this paste on light flame for approximately 10 minutes.

6.   Once it’s properly fried add little water in it and keep it on light flame for another 2-3 minutes.


7.    Once the paste starts to boil add your egg very carefully in this paste so that they don’t break.


8.   Keep in to the light flame, and covey the pan with lid for 2-3 minutes.

9.  Now your Egg Bhuna Masala is ready, take it out in a bowl and garnish with coriander leaves.
