Beetroot croquettes


Today we are sharing recipe of Beetroot Croquettes. Croquettes is a small bread crumbed fried food roll containing any kind of filing and the filling that we have used is of beetroot but you can make it with mashed potatoes, meat, cheese or any vegetables of your choice. Usually whenever we are making snacks we stick to potatoes or mix vegetables for filing so trying a roll with beetroot was quite fun and tasty!


Ingredients:

2 beetroot
2 carrot
1/2 cup green peas
2 onion
1 tablespoon ginger & garlic paste
4 potatoes
1/2 bowl coriander leaves
1 green chili
1 teaspoon black pepper
1 teaspoon garam masala
1 tablespoon salt
1 cup oil

Ingredients for Coating:

2 tablespoon all porpose flour
2 tablespoon cornflour
1 teaspoon salt
1 bowl bread crumbs

Directions:
1.       First grate beetroot and carrot and keep them aside
2.       In a pan, stir-fry the onions ,once translucent add the ginger & garlic paste and green chillies
3.       Stir for 1 min ,then add garam masala, coriander powder and black pepper, stir it until the masala is cooked and oil starts to separate
4.       Then add beetroot and carrot to this masala and stir it continuously on high flame for 4-5 minutes.
5.       Now take this mixture out in a bowl
6.       Boil the green pea and potatoes separately and remove potato skin
7.       Now mash the potatoes & peas and mix it with the beetroot mixture
8.       Roll them in any shape you like round or oval and keep them aside
9.       In a bowl mix maida, salt and corn flour together to make a batter
10.   Dip the beetroot cutlet first in the batter and then crumb coat it with breadcrumbs
11.   Heat the oil and deep fry them until golden brown on both sides
