Mutton Masala


Our third dish for Ramzaan special is Mutton Masala!! This dish is extremely rich in terms of flavours and slow cooking technique is used in it. This mutton is made in pressure cooker but if you have a big handi at your home then I will recommend you to use that as it will really bring out the flavours. This mutton is little spicy and gives right punch to your taste buds. I would say perfect dish to cook for a dinner party!

Ingredients for Marinating:

1 kg mutton
1 cup curd
1 tablespoon mutton masala
1 tablespoon ginger & garlic paste

Method:
1.       Wash the mutton properly and leave it aside for 10 minutes to drain out excess water
2.       In a bowl add mutton, curd, mutton masala, ginger & garlic paste and mix it properly
3.       Then put it in fridge and leave it overnight for marinating

Ingredients for Cooking Mutton Masala:

1 kg chopped onion
1/2 kg chopped tomato
1 tablespoon chopped ginger
1 tablespoon chopped garlic
3-4 bay leaves
3-4 red chili whole
2 black and green cardamom
2 small cinnamon sticks
1/2 cup mustard oil
1 tablespoon salt
1 teaspoon turmeric powder
1 red chili powder
1 tablespoon garam masala powder
1 tablespoon coriander powder
2 tablespoon chopped coriander leaves

Direction for Cooking Mutton:
1.       Take a pressure cooker , put mustard oil and heat it then put bay leaves, dry chillies, green & black cardamom, cinnamon sticks and let it roast for sometime
2.       After that add onions till and roast them till they turn golden brown colour
3.       After that put finely chopped ginger & garlic in it and let them roast with onions
4.       After that put in tomatoes and allow the whole mixture to get brown, once it becomes little thick then put salt, turmeric powder, red chilli powder, coriander powder and garam masala
5.       Let the whole thing cook on light flame for another 10-15 minutes till all the aromas start emitting out and the masala gets dark brown in colour
6.       Now you need to add the marinated mutton to mixture and put the flame on high and let it cook 10-15 minutes
7.       Now put the flame on medium and cover pressure cooker with lid and keep it like that for 10 minutes
8.       Now put it on low flame and leave it like that for 1 hour so that mutton cooks properly and all the masala gets into mutton pieces
9.       After one hour mix it properly and now take it out in serving bowl
10.   Garnish with coriander leaves and your Mutton Masala is ready to serve

  1. मीरा जी, कुकर में सिटी लगाने की जरूरत नहीं है क्या? और क्या रात भर marinate करना जरूरी है?

  2. Amit u need not marinate overnight but at least for 3 to 4 hrs and no whistle is required because u r letting the mutton simmer for 1 hr which will be enough time to make it tender :)
