Thekua (Khjoor)


Thekua/ khjoor is the most popular dish from Bihar, Jharkhand and parts of Eastern UP; mostly prepared during festival like Chhath pooja, teej etc. It is sweet and crispy recipe and looks like cookies.

These crunchy round thekua's are very easy to make with just few main ingredients



Ingredients

  • 2 cups of whole wheat flour 
  • 1 Table spoon green cardamon powder
  • 1/2 small bowl chopped dry coconut
  • 1 table spoon fennel seeds
  • 1 Mid bowl jaggery crushed
  • 2 table spoon kismish (dried grapes)
  • 1/2 small bowl ghee
  • 1 small bowl vegetable oil for deep fry
  • 1 cup water

Method

  1. Take 1/2 cup water add jaggery and mix properly  
  2. Now take big sized bowl - add whole wheat flour, cardamon powder, chopped coconut, fennel seeds, kismish, ghee and melted jaggery and mix properly .
  3. Make dough of the material .
  4. Make small balls and but any kind of moulding case (sancha) or you can make small tikki as well with your hand.
  5. Now heat oil in  open pan and put your whole wheat cookies  for deep fry 
  6. Keep on the low flame and fry till brown color.
